When a friend of mine shared a recipe for Instant Pot Pho Ga from Serious Eats, I knew I had to try it. I used the veggies I had on hand rather than what the recipe suggested, but you can follow it to the letter if you like.
Mushrooms, green onions, broccoli stalks made up my veggies (fridge was a little bare post-vacation)
I cut way back on star anise (3 down to 1) because it is too pungent for me.
Jaggery instead of rock sugar
Everything in the IP with cubed chicken breasts (instead of drumsticks)
I cooked up some pad thai style noodles, and added fresh spinach to my bowl
Fresh basil from the garden
The drizzle of sriracha on top is mandatory, unless you added enough chillies while cooking. This is not a dish you want to eat bland.
Definitely a warm & comforting meal with minimal effort. I love that you can add whatever veggies you want to it to make a balanced meal for yourself. Yummy and healthy too!
