Ginger cod in a packet

I wanted to take a break from all the red meats I have been cooking in the magical Instant Pot, so I picked up some frsh cod filets from the store. However, the IP has spoiled me, and I no longer enjoy standing in front of the stove cooking things. “En Papillote” recipes to the rescue! Here’s a soy ginger cod recipe, because why settle for butter & garlic when you can go soy ginger?!

Ingredients:

1.3 lbs cod filet (thick) [this was about 1.5 filet pcs at the store]
1 tsp sesame seeds
6 slices oranges

Marinade: Mix together:
2 tbsp soy
1 tbsp rice wine
1 tsp sesame oil
1 tsp ginger paste
1/2 tsp garlic paste

Method:

Preheat oven to 425 deg. Reduce to 400 when ready.
Wash and pat the filets dry.
Sprinkle a small amount of sesame seeds on each filet.
Prepare 3 packets, dividing the fish into 6 pcs, 2 per packet.
Drizzle 1 tsp marinade over each fish pc
Place 2 pcs in each packet
Lay 1 slice orange over each piece
Drizzle a tsp of marinade over each slice/pc, distributing marinade equally until it is all used up.
Close up packets.
Bake in 400 deg oven for 20-25 mins.
