Pork Carnitas in IP

I decided to try a carnitas recipe from Nom Nom Paleo’s website, and man was it amazing! The kid has already requested that I make this again, and I guess I will!

There is no browning to be done beforehand- everything gets tossed in the IP! Pork shoulder is cubed and rubbed with the spice mix, then tossed with with orange zest, orange juice, onions, garlic, and a bay leaf.

I set mine in the pressure cooker for 45 minutes, because I wasn’t going to take any chances with the meat not falling apart.

I decided to throw the cooked meat on a fry pan, and it turned gloriously brown with crispy bits. This is the only way to eat carnitas!

I served it with a side of brined nopalitos.

It also made delicious leftovers the next day, in a rice bowl. I fry up just what I need for that meal, so it is always fresh and delicious!
